Mexico has a number of drinks that are only now gaining in popularity in North America and elsewhere, despite their exhilarating tastes. Here are a couple of the more popular beverages: chocolate and horchata.

Mexican Hot Chocolate

Mexican hot chocolate has a few ingredients missing in its northern cousin - almonds, vanilla, cinnamon, and sometimes even a bit of chili (for a subtle bite). Made with milk, the chocolate can be bought in hexagonal pieces with cinnamon, almond and cinnamon flavoring already in it (both Abuelita and Ibarra are popular brands), but in Mexican open air markets, the mixture is more "rough" looking and available in bars or cones. You then use a molinillo (wooden whisk) to give your chocolate a nice froth on top.

Horchata - Cold Mexican rice drink

In the summer months, a sweet, cinnamon rice drink is popular in Mexico. A variant of the original drink from Moorish Spain, Mexican horchata is prepared by soaking white rice in water (overnight), and then using a blender to process. (You can then use a sieve to strain out the dregs, or just let them settle to the bottom of the pitcher or jar). Sugar and cinnamon and/or vanilla extract are added, along with ice, before serving.

Despite being white and "milky", horchata is non-dairy and safe to drink by those who are lactose intolerant!

The Salvadorean variant has cocoa and an herb ("morro", calabash), and the Ecuadorean version is an herbal drink without rice.
